Mmmmm breakfast potatoes ......

Cut 4 medium russet potatoes into cubes and rinse off with cold water and drain well. Heat a large skillet over medium heat and add 3 TB of olive oil. Place potatoes in the skillet and stir to coat and while they are cooking, season with the Homefry seasoning. Cover with a lid and cook for ten minutes. Remove the lid and cook for another 15 minutes, turning frequently until brown and crisp on all sides.
